Honduran Marcala
Subtle Earth Organic is an exceptional Honduran coffee from the Marcala region. No chemical inputs are used. The “cherries (fruit of the coffee bean),” are composted and used as fertilizer, along with vermiculture, and fewer insects are present at the altitude that it’s grown, so no insecticides are necessary. If there ever is a bug problem, farmers sometimes plant peppers as a repellent.
This high altitude coffee is very dense, and thus has “depth of flavor” and we are able to roast it just right to bring out its natural flavor characteristics and a wonderful sweetness.

How to brew the perfect cup of coffee:
Traditional Drip Machine:
Add one level to slightly rounded measuring tablespoon (10g) of finely ground coffee (fine granular sand, not yet a powder) to each six ounce cup of water (177 ml) and adjust to taste.
French Press:
Add 1-2 measuring tablespoons (10-20g) of coarse ground coffee per cup (177ml) of water and adjust to taste. Never add boiling water.
Espresso Machine:
Fill porta-filter to line with espresso ground coffee. It’s important to get the precise grind to ensure maximum crema.
Hand Drip Method:
Add 8-10 grams of medium-fine ground coffee per cup. Heat water to 190-195 degrees, (88-90.5 c) pre-soak grounds, slowly add water in a clockwise motion. Adjust to taste.

I have been looking for a light roast coffee, so far all I have found in the shops here (I live on a small island in the Caribbean), are medium roast. I also wanted a coffee that was not too acidic, normally you can counter that with milk or cream, but I prefer my coffee black. I read the reviews here and I checked online, and found that this brand, was quite well rated. The bonus' were that it was Non-GMO (very good), organic (also very good) and 100% Arabica beans (really very good). The light roast meant that it would have more caffeine than any of the other roasts.
I drink one tumbler (RTIC 40oz) of coffee a day, in the mornings. This helps with any hunger pangs (coffee helps on the keto diet that I'm on), and the 40oz tumbler means that it takes me easily 3-5 hours to drink the whole thing, since I don't like to gulp everything down in a few minutes. I have settled on using 50g for my tumbler, with 1 sugar (and 2 sachets of Stevia).
I really like that every time I open the bag I get a strong smell of coffee. With so many other brands, that smell is gone in a couple of days. The coffee is really not acidic, something I am really happy about, and yes it still keeps a smooth taste over the few hours it takes for me to drink it.
I am quite surprised how much I like this coffee, and I am working my way to dropping the sugar and Stevia so I can just get the pure taste of the bean.
I would absolutely recommend this to anyone, especially if they are just getting into coffee.

Still drinking this coffee. But now that I don't use sugar, just Stevia, it tastes better. I'm getting more of the coffee taste without the sharp sweetness of the sugar.
2nd Edit/Update
It's September 2020, and another bag is on its way to me. This is the coffee for me. Whether hot or cold (iced coffee), this is the coffee I prefer. (cheesy, but true).
When the apocalypse came, I was terrified that my wife and I would be stuck in our house together with the kids WITH NO COFFEE. So I found this Don Pablo stuff. Suspiciously inexpensive for organic coffee. "Fine," I thought, "I'll just buy the two-pounder, and if it's terrible we'll just go somewhere else.
It came, in a nice looking bag, and I put it in the basement until all the "good" coffee was gone. With much trepidation I opened it and did the smell test. So far, so good! Rich and earthy, the beans looked great, with lots of oil to the touch. So I threw them through the burr grinder for a nice cuppa in my Bialetti.
Lovely grind...still, though, I was skeptical. I brewed the coffee, poured that bad boy, and delicately took my first sip. Wowsers. Really good coffee!
Well, maybe they just put the good beans on the top and I'll get to the bad ones...
Nope. Burned through the whole bag, and the same amazing quality. So, now, I'm subscribing to the Don Pablo with a 5-lb bag every six weeks.
TL;DR: this is goooood coffee. Don't buy too much, though, or I'll find you. And take it.
I started my career in the coffee business at the age of 18 in 1972, unloading rail cars of green coffee beans for CFS Continental Coffee in Toledo Ohio.
Within four months I was dumping 100+ pound bags of green coffee into the green coffee system for blending and roasting.
Within the first year I worked my way to the roasting floor and trained as a skilled coffee roaster and grinder the old fashion way, by sight, smell, feel, and sound.
Within the 5 years I spent at CFS I worked my way into quality control, cupping/tasting and assigning beans from different regions to specific blends, including Dunkin Donut’s very high quality coffee profiles.
After 5 years, CFS shut down their roasting operations in Toledo, and I went to work for ARA Coffee Systems in sales until 1978.
In 1978 accepted a position with Nestle Food Co, coffee division selling the worlds number one selling coffee at the time, Nescafe, along with Tasters Choice and a few other smaller coffee brands.
I spent the next 31 years with Nestle in sales and marketing of those coffee brands and other Nestle products, until my retirement in 2009.
When I say this is an excellent coffee and great value, it’s backed up by a lifetime of roasting, tasting, selling, and drinking good coffee.
