The Blade
VG-10 Steel Core
VG-10 is a Japanese stainless steel that is often utilized in high end Japanese cutlery. It has a hardness, or a HRC level, that exceeds that of most other stainless steel cutlery on the market. Its exceptional hardness means that the cutting edge can be constructed thinner, and therefore sharper, allowing the blade to seamlessly cut through almost any ingredient placed in front of it.
Hammer clad Damascus steel
The hard VG-10 steel is clad in a softer Damascus steel in order to give the blade an added toughness and durability. The hammered texture of the blade eliminates friction and keeps food from sticking to the blade.
Care & Sharpening
Traditional Japanese knife making values a sharp edge, which requires attention and care. Sharpening and honing should be done with only water whetstones. Hand wash and dry only, and do so immediately if working with acidic ingredients. Do not use on objects such as bones, nutshells, and frozen foods.

I got my first and favorite knife as a suggestion from a chef who I was learning from, on a trip to Japan about 12 years ago.. I have been working professionally in kitchens for over 27 years and have gotten to use knives of other chefs from around the world.. Each knife maker and knife has a place and can be a personal choice of what feels right for you..
The blade of this knife is exceptional, the quality is evident as soon as you see it.. The blade is light great for hours of heavy use..
Cuts with amazing accuracy..
As a chef who uses my knives daily I only carry 3 knives with me and 2 are Yoshihiro.. One has been used daily for years and is still quality and keeps a razor edge with a little care..
Would recommend for anyone who is looking for a good quality Japanese knife..

We are cooking enthusiasts, so we have a large variety of traditional knives from different countries and companies. This knife has Japanese specialities.
It sharpened only from one side, on the right side and it is an interesting feature.
The handle is made from 2 pieces of wood, the manufacture claims that it is redwood, but I cast doubt.
Maintenance. Mine came with an unfinished Saya (wooden knife cover) and an unfinished octagonal wood handle. Both took nicely to the food grade mineral oil I had on hand. VG-10 steel resists rust and stains, but it's not immune to either if you abuse the material. Do not let anybody leave the knife soaking in water. Get acid off of it an an early opportunity. I'm not sure it needs an oil wipe down every time you put it away, but it absolutely does need to be dry before it it stored.
My Amazon purchase came from Yoshihiro's Amazon store. Since they import the knives directly, you can be assured they are the genuine article--something I think is important at this price point. Yoshihiro's customer service is also very responsive to e-mails when you have questions.
