Forged and hammered with 46 layers of steel in the Damascus tradition with a VG-10 Core, the VG-10 Hammered Damascus Series has been a perennial seller, combining performance, beauty, and extraordinary value.
VG-10 is a Japanese stainless steel that is often utilized in high end Japanese cutlery. It has a hardness, or a HRC level, that exceeds that of most other stainless steel cutlery on the market. Its exceptional hardness means that the cutting edge can be constructed thinner, and therefore sharper, allowing the blade to seamlessly cut through almost any ingredient placed in front of it.
Care & Sharpening
Traditional Japanese knife making values a sharp edge, which requires attention and care. Sharpening and honing should be done with only water whetstones. Hand wash and dry only, and do so immediately if working with acidic ingredients. Do not use on objects such as bones, nutshells, and frozen foods.

The ancient traditions of Japanese sword making live on in the hands of Yoshihiro master artisans creating handcrafted knives with the best materials. Forging together 46 layers of Damascus steel with with a Nickel VG-10 Gold high-carbon steel core, our knives are hammered to create a finish known as ("Tsuchime"), which is as elegant as it is functional, preventing food from sticking to the blade. Handcrafted natural magnolia wood is beautifully polished and hand attached in the traditional Japanese style of the blade. A bolster made of Water Buffalo horn is affixed between the handle and blade. Beautifully polished, color and shade may vary.
Tsuchime which is Japanese for "hammered" is the hand hammered finish that creates a beautiful pattern that functions as a traditional form of granton indentations which prevents the sticking of food to the sides of the knife. It comes package in a very nice presentation box and comes with a wooden sheath. I know most people would think this is quite pricey unless you are a professional chef. Still, as the old adage goes, "you get what you pay for." I'm thinking about buying the 6" version of this knife even though I don't really need it.
The blade is beautiful to look at. Do not use a rod sharpener, you'll ruin your edge. personally I wouldn't even trust my neighborhood sharpening service unless they're definitely experienced with those kinds of edges. I've been using whetstones for years, so I'm okay I hope...
The blade is a bit thick and the handle a tad too light but I'm just used to cheaper knives. What makes the big difference to me is the hammered surface, which acts a little like a santoku blade, allowing cucumbers, tomatoes and other water-heavy things to fall off the blade more easily. Dicing garlic, however, is still a challenge with this, but that's probably also not the purpose of this type of knife.
