Which version is more suitable for me - low or medium?
This depends on what exercises you plan to do. The low Parallettes are better suited for push-ups, handstands or planche and are easier to transport due to their lighter weight. The medium Parallettes are better suited for exercises like L-sit, seated dips, handstand push-ups. etc.
