Customers dislike the stability of the manual food mill grinder. They mention that it takes some force to hold it steady with their non-grinding hand, and it's difficult to hold on to when grinding. The screw that sets the coarseness doesn't stay put while in use, and the design makes it difficult to grip with smaller hand. So, for anyone disappointed in any grinder for not being up-to-par on that score (Turkish grind), your expectations are way off because you're using the wrong machine.
As for this grinder, I am totally satisfied. A 25 year mechanical defect warranty through the manufacturer is a huge plus.
I don't abuse my machines by trying to make them do what they were never intended to do. I'm not even botherd by the plastic mounting bracket which holds the mechanism in place as I'm not using the grinder for anything other than plain, daily coffee. I haven't even noticed any slipping grip problems as my firm grip is enough to hold the grinder from the side as I crank it. A side handle might be nice though for a more petite hand or easier grip. My wife will almost certainly have to hold it between her legs but, I grind the coffee and it hasn't been an issue.
Capacity wise, this grinder holds a full pots worth of beans and grinds for a 4-6 cup coffee pot, although I don't use it for that myself. For my personal purposes, I drop the grounds into a coffee filter, pull up the sides and twist it together and drop it into a large tea holder, then drop that into some purified water (no dead water! Look up dead water if you don't know what that means), and put it in the sun to brew. One sun cycle later, when I get home in the evening, I have some lovely sun brewed coffee waiting for me. One full container of beans, corse ground, makes about 1.5 quarts or ~6 cups (measured) of coffee.
I have had no issues with the grind dial slipping either as I'm not picky and even were it to slip to either the corsest or finest grind, I have very easy and reasonable expectations not to ever drink the dregs out of any cup. For those of you who don't know, cowboy coffee is boiled with the grounds freely in the coffee pot. It's completely normal to dump out the dregs. In the case of a normal coffee pot, never drink the last 1/2 cup of coffee out of the pot. For espressos lovers, let the espresso settle for 30 seconds and never dump the last 1/4th teaspoon of espresso into the cup. You'll avoid having to drink any coffe grounds that way. Simple. For as much as coffee lovers need a nice grinder, nice beans, good ingredients (milk, cream, sugar, etc.), it doesn't stop there. You may love wonderful fresh made coffee but, you have to know how to drink it too! As with tea, don't let a few leaves (or grinds) ruin your cup. If it's direct to cup, leave a table spoon in the bottom of the cup and don't drink it. When you buy a cup of coffee, by all means, expect no dregs. When you make your own coffee, you're doing it yourself and all the work that comes with it. Yes, you will get the absolute best cup of coffee you ever have because you can make it the way you want it, with the beans you chose as your favorite. However, you deal with the dregs too. If dregs bother you, brew your hot coffee in a normal pot and then strain it again through a second filter. Businesses have a ton of litte tips and tricks that they use which you'd never even notice on your way to work like these. But at home, figure it out for yourself.
And for heavens sake, stop blaming the grinder for not being "fine" enough or "too corse". Yes, there is a difference in grain size. Yes, there is a difference in strength. But, your doing it at home, folks. Figure it out yourself. Business have tape over levers, have to learn the quirks of the machines they use, make constant adjustments to their equipment, and are cleaning, cleaning, cleaning constantly. Did you think that because you were at home you didn't have to figure it out for yourself too? Look, really look, next time you buy a cup of coffee at a coffee shop. You'll see rags on every single surface for wiping away grounds, spilled coffee, spilled milk and foam, and spills of every kind? What does that mean to you? It means, put a wipe rag next to your coffee area so that you can grab it and wipe up what you spill! It's NOT abnormal or strange to spill grounds, sugar, milk, etc. It's absolutely normal to spill these things from time to time. So, be aware. You will spill. You will have to clean it up! From blade to ceramic to every grinder on the planet, there are quirks of all kinds with every one. That doesn't make them bad or defective. Life doesn't change for you, you change for living. So, to make a great cup of coffee, it's going to take a little more effort than twisting the handle or pushing the button. Once you look around and know what you're dealing with, you can easily adapt. A wash rag next to the coffee station for stray grinds and spills. A small brush for routine cleaning. A habit of leaving the dregs behind instead of swallowing them. All of these and more are litte things you can do to save yourself a lot of hastle and keep you enjoying every cup. Ok?
All around, this is a beautiful grinder and I have high expectations for its longevity. It does anything and everything I'd expect from a home grinder. It's beautifully crafted, grinds well in a wide variety of sizes, grinds a sizable amount for you and any guests you may have, and is hopefully something you'll only ever buy once. I am very satisfied with it so far and I look forward to servicing it personally for many, many years to come.
Nothing comes without trade-offs, and here are some of the things I've found. Like several others have mentioned, this grinder does not stabilize itself; unless you nail it to your countertop, you're going to have to hold it. It takes minutes instead of seconds to grind enough for a full pot of coffee, which may pose an issue if you need to grind lots coffee instantly and very frequently, unless you also intend to develop muscular forearms.
If you've been looking for a way to grind for your espresso machines as effectively as a commercial cafe grinder for a fraction of the price and enjoy the added ritual of manually grinding your beans, you've just found it. The only other comparably-performing, budget-friendly option I've found would be an adjustable turskish coffee grinder, which may half the price and more compact, but a little harder to use and slower to grind - though the results are praised over other grinders in the same price range.
Something else worth noting: There are several Zassenhaus grinders of the same general appearance as this one with the only differences being the finish of the metal and stain of the wood. It appears that they all use the same reliable grinding mechanism. No one told me this and I wish someone had!
May add updates in the future.
