Main tip: Buy a separate thermometer. This is not an option or a suggestion - it is a necessity. Buy one when you buy the smoker. I bought the "Vauno Wireless meat thermometer for grilling smoking" because it has meat probes & an ambient temp probe. The reason you need this is the main temp probe in the unit is near the bottom/ heat source & the temp varies quite a bit from bottom to top. It is more important to know the temp where you have your meat than the temp next to the burn pot. Once you get that figured out you can base the temp setting on where your meat is. The top rack (I mainly use the top 2 racks) can easily be 200-225 while the unit is actually set at 250-275 for example. Getting those temp differences figured out and taking your time to understand and actually work with the unit will make all the difference in the world.
8 racks of ribs fit perfect! Holds temperature even in the winter months. We got it in February and use it fairly frequently. Done everything! Salmon, corn, steak, turkey, ribs and everything comes out amazing!
The only complain we have so far is that the pellet dust builds up easily and you have to keep an eye on it to make sure that the hopper keeps pushing pellets out. Honestly we may need to do some minor upkeep or sift the pellets before putting them in.
