High Viscosity Methylcellulose E461, or methyl cellulose is a thickener and emulsifier. Methylcellulose is a compound derived from cellulose. This white hydrophilic powder dissolves ONLY in cold liquid to form a clear viscous solution or gel. A solution of methylcellulose will turn solid when heated and since it is completely thermo-reversible will turn back to liquid when cooled. It is also used as a stabilizer in ice cream to help prevent the formation of ice crystals during freezing or re-freezing after a thaw. Like cellulose this component is non toxic, and not allergenic. Methylcellulose HV is High Viscosity (approximately 4500 cps. in 2% solution). Cold water soluble, Methylcellulose HV will gel when heated to temperatures from 132F to 148F. Our LV and HV methylcellulose can be mixed together at different ratios to achieve desired effects. This product is certified Kosher (Pareve) by the Orthodox Union

Got this originally for a vegan "ground" recipe. Turned out great! This stull really helps create a tight, meat-like, consistency. And very little is needed for a big recipe; I used 2 tablespoons for 4lbs of "meat" with tons left over for whatever i make next. Highly recommend for vegans, vegetarians, or anyone trying to eat less traditional meat products.
Did you know methyl cellulose is also a glue? I didn’t until Elmers phased out their Paper Mache glue. Turns out it was methyl cellulose. This works for making paper mache. I wouldn’t want to eat it though.
My doctor gave me a special size for these. The company I went to get them from screwed my cat up for about $110 so I came on here and got these. They are probably 15 to 20% less weight than the other ones, but my doctor said they were just fine.

I got this for a recipe I found online to make fake chicken with pea protein (and various other items - Sauce Stache is the youtube if you're interested). I just made it yesterday and it tastes amazing. The Methylcellulose was part of the binding mixture and it worked very well. I have a ton left because the recipe only called for a few tsp. I am excited to try this in other recipes.
I've been making veggie burgers for many years, always had a problem with them falling apart and generally not having the same mouth feel or type of chewiness as actual meat. This is the secret ingredient. You kind of have to experiment to find the right amount to fit into recipes but it does work.
