Settled on an aluminum pan because I have a glass top stove
My electric stove top just doesn't work with cast or steel pans. The center gets significantly hotter than the edges.Aluminum transfers heat much faster than steel or cast and I have high hopes that it will work out. I'm currently in the initial stages of seasoning. It seems to be working well.I'm using a cast iron formula flax oil. And every article and video I've seen says to use a lint free cloth to spread the oil and wipe it down after oiling. What better cloth to use is a gun cleaning patch. Cheap and works very well.I'm putting the pan in my oven, bottom side up, oven set to 450* and let it season for 1-2 hours. I turn off the oven and let it cool slowly. A few hours later, you see the bronze coloring the pan is taking. I will rinse the pan, heat it to dry and re-season several more times. So why only 3 stars? The bottom is not flat. It rocks on the glass top. I will fix it after seasoning.I hope my experience has helped. As an update:The pan is now well seasoned. The photo shows a clean pan after 7 or 8 seasonings using the above methodology.Eggs, hash browns, pork chops, burger patties, bacon all cook as well as my Faberware non-stick.\And clean up is a breeze, using hot water and a dish sponge. It does use a much lower temp setting, but I get a nice, even heat load in the pan using my glass top stove. If your glass top is an induction stove it will not work. The pan, after all is aluminum. It sits flat, now, after a solid whack on the bottom where the low spot was. Used a scrap piece of 2x4 and a dead blow hammer in order to get wide, even pressure. Do not use a claw hammer directly on the pan. It is, after all, aluminum.Hope this helps ...
