The "key-fir" unlocking stronger gut health
Fun fact: The word kefir comes from the Turkish word keyif, meaning "feeling good."
For hundreds of years, this fermented probiotic beverage was a well-kept secret from the rest of the world. Today, we are privileged to have this drink whenever we like, and enjoy all the benefits that come with it.
(Don't worry, they're gluten-free)
What are kefir grains, exactly?
These gelatinous blobs are a symbiotic colony of bacteria and yeast—AKA, a SCOBY. They're called "grains" due to their appearance, not content.
While milk kefir originated in the Caucasus mountains, water kefir started in Mexico. These grains, or tibicos, form on the pads of the Opuntia cactus.
How long will it take to rehydrate my kefir grains?
Rehydrating kefir grains can take between 3 and 7 days. During this time a layer of froth or foam may form on the surface. This is normal and caused by an overgrowth of yeast. You'll know they're done when they appear plump and translucent.
How much kefir can I get from this starter?
As much as you want! This is an heirloom starter, so you can reuse the grains over and over to make endless batches of water kefir. You'll start with about a quart per day, but as your grains multiply, we recommend 1–2 tsp grains per quart of liquid.
How do I know when the kefir is done culturing and ready to drink?
Your water kefir will be cloudy, and should begin bubbling when moved. It will also have a sour taste, signaling the grains have processed the sugar. Simply strain the grains and move them to a new jar of sugar water! Note: Do not rinse grains.
I need to pause making water kefir, but don't want to kill my grains. Can I take a break?
Yes! As long as your grains have been actively culturing for 3–4 weeks. For shorter breaks, store grains in 1 qt sugar water (as if culturing) in fridge up to 3 weeks. For longer breaks, dry them and store in airtight bag in fridge up to 6 months.
Can I make other types of kefir with these grains?
You can't make milk kefir, but you can make kefir with juice or coconut water; for best results, keep a separate set of grains for each substance you're culturing. You can also add flavor to finished water kefir (with or without a 2nd fermentation).
How do I flavor water kefir?
Simply Add Flavoring
You can add just about anything you like to your water kefir to kick it up a notch, such as herbs and spices.
One of our favorite quick ways to flavor kefir is to add fruit juice. For most juices, add ½ cup juice for every quart of kefir; for more concentrated juices like lemon, only use ¼–⅓ cup.
A Second Fermentation
You can easily infuse your finished water kefir with fruit for an extra burst of flavor and fizziness.
After you've strained your grains, simply pour kefir into bottle, leaving 1" of headspace. Add any fruit and let ferment 24 hours for fresh fruit or 2–3 days for dried fruit.

Gather ingredients
1 cup honey | 1 cup water | 3 tbsp vanilla extract | 4 cups water kefir | 2–4 tbsp heavy cream

Heat honey & water
Gently heat honey and water in small pot, stirring till honey totally dissolved. Remove from heat.

Add vanilla & cool
Once cooled, combine mixture with water kefir, and fill flip-top or similar bottles with concoction.

Cap bottles tightly
Ferment for 24–48 hours or until bubbly. (Tends to taste a bit yeasty if fermented for 72 hours.)

Pour & enjoy
Pour cream into bottom of a tall glass. Fill glass with bubbly kefir brew. Enjoy!

First off, the grains were the size of pop rocks, not the size shown in the pictures. It's like they scraped the bottom of the barrel for my "grains". Next I rehydrated them as the instructions say, thought everything was good to go. I gave them 2 days even though they were translucent after 24 hours. I began my first actual crew, water was cloudy and smelled interesting so I put it in bottles for 2nd ferment with juice, this resulted in nothing at all for 3 days so I dumped it and began again. I have now done 4 brews of this with exactly 0 bubbles formed, 0 activity except for unwanted activity. There is a film on top of my 4th attempt now (2nd ferment) that looks like an oil slick. Some of my grains are floating in the large jar where I'm doing my first brew, there are yeast strands hanging, and it had only been 30 hours. Something is wrong with these grains. For $20 I would not spend your money. My sister ordered from Amazon from a different company, half the price, at the same time i ordered and she has had many successful batches. It is just this brand that is awful. I 100% would appreciate a refund. I can send you these duds back, they ate absolute trash. I've wasted so much sugar and juice trying to get these to grow with absolutely no luck.

Patience required but the brand Culture for health are known for their grain quality.
