The first thing that catches the eye about the beautiful Shun Premier series is its magnificent tsuchime (tsoo-CHEE-may) finish. This hammered finish combined with Premier's mirror blade polish and intricately layered Damascus, gives Shun Premier a look that is at once rustic and sophisticated.

Pakkawood Handle
Shun Premier features a PakkaWood Handle that offers a comfortable grip. Walnut-colored PakkaWood is durable, and won't harbor bacteria. The embossed endcap adds beauty and balance.

16 Degree Cutting Edge
Like all Shun knives, the Premier line features a 16 degree cutting edge that is hand sharpened and razor sharp. The blade has a double-bevel, quick taper, and flat ground.

The anesthetics of the knife are exquisite - it's my first knife with beaten metal (to reduce friction while slicing) - and I wasn't sure from the pictures if I would like it. However, in person, it is absolutely gorgeous and everyone oohs over it. Can you get a cheaper knife with similar metal quality? Probably yes, but definitely not one that looks and moves like a work of art - and this knife is a work of art. For a high performance tool that will last my lifetime, I'm quite satisfied and would recommend this knife - the utility and beauty are worth it.

Probably yes, but definitely not one that looks and moves like a work of art - and this knife is a work of art. For a high performance tool that will last my lifetime, I'm quite satisfied and would recommend this knife - the utility and beauty are worth it.
This knife and I have been through some tough times, too. As one of the more pricey knives I own, I was devastated when I dropped it from hip-level on to tile, right on the point. It cracked and bent slightly, but after some love and some dedication with sharpening, I was able to get it back to like-new.
Because of this I become very defensive when another chef or kitchen member tries to touch or use this knife. Nobody is allowed near it without constant, direct supervision. I simply can't express how much I love this knife and would definitely buy another if this one fails. However, with 18 months of daily use on a steel surface and being run on a honing steel several times a day, I've noticed no real deterioration of the edge. I expect this knife to last me through my career!
This knife is stunningly beautiful with the damascus steel and is very sharp. I am taking it to the stone soon. So far I really love it. I am impressed. It is very easy to work with. If you want a knife that id functional and beautiful, this fits the bill.
