- In modern times, semolina flour continues to be cherished for its distinct flavor and texture, not only in traditional recipes but also in contemporary culinary creations. Its usage has extended to different cuisines worldwide, showcasing its adaptability and enduring appeal.
Some Great Uses of Semolina Flour
- Semolina flour is a type of flour made from durum wheat, a hard wheat variety known for its high protein content. It has a coarse texture and distinct yellow color.
- Semolina flour is commonly used in making pasta, bread, and pizza dough. It adds a pleasant chewiness and nutty flavor to baked goods and pasta dishes.
- Semolina flour is also popularly used in Mediterranean, Middle Eastern, and Indian cuisines for various recipes like couscous, halwa, and semolina pudding.
- Its versatility and unique texture make it a favorite among home cooks and professional chefs alike.

- Gradually whisk in 1/2 cup of semolina flour and cook on low heat for 10-12 minutes until thickened.
- Stir in 1/4 cup of sugar and 1 tsp of vanilla extract until sugar dissolves.
- Remove from heat, let it cool slightly, then transfer to serving bowls.
- Optional: Garnish with cinnamon/nutmeg, sliced almonds, or raisins.
- Refrigerate for at least an hour until chilled and set.
- Serve the creamy semolina pudding cold and enjoy!

Fluffy Mediterranean Couscous Delight
Instructions:
- In a large mixing bowl, combine 1 cup of semolina flour, 1 teaspoon of salt, 1/2 teaspoon of ground cumin, 1/2 teaspoon of ground coriander, 1/4 teaspoon of paprika, and 1/4 teaspoon of turmeric. Mix well to evenly distribute the spices.
- Gradually add 1 cup of water and 1 tablespoon of olive oil to the semolina mixture, while continuously stirring with a fork or your hands. Keep mixing until a crumbly texture is formed.
- Cover the bowl with a clean kitchen towel and let it rest for 15 minutes. This allows the semolina to absorb the moisture and become fluffy.
- After resting, fluff the couscous with a fork to break up any clumps and separate the grains.
- In a separate bowl, combine 1/4 cup each of chopped fresh parsley, mint, and cilantro, and the juice of 1 lemon. Mix well.
- Gently fold the herb mixture into the fluffed couscous until well combined.
Enjoy the Fluffy Mediterranean Couscous Delight as a refreshing side dish or as a main course. It pairs well with various Mediterranean-inspired dishes.

UPDATE: 12/07/2013
==================================================
The new price for this flour ($25) is almost 40% higher than the
previous price ($18) so it's not quite the bargain; it's still
less expensive than any other option.
One might think semolina is a scarce commodity, or that the price
is tied to the value of a bitcoin.
==================================================
I am reluctant to say anything about this product because I don't want to share it with anyone.
I found a recipe for pizza crust that required semolina flour. Having never used semolina before, I searched amazon and found 12 pounds for $18. While at first it seemed like way too much flour, the 2-pound bags are easy to store in the pantry, fridge or freezer until you need them.
My pizza crust is now much improved, and I've made dinner rolls with semolina, too. Friends rave about my pizza, and the rolls were a big hit. "How'd you get them so yellow and creamy?" they ask. I smile and say it's an Olde family recipe! (I've never met any of the Olde family, but I will praise them here, in print, just in case any of them are reading this!)
In the end, it's flour, and it behaves as you would expect. It imparts a delicate aroma to your baked goods along with a yellow tint. It is not as finely-ground as all-purpose flour, nor is it as couarse as cornmeal - it's texture is somewhere in between. And unlike cornmeal, it doesn't burn when used on a hot baking stone. Sprinkling semolina on your peel and proofing your loaves makes it easy to transfer them onto the stone.
I have not used any other semolina flour, and I am unlikely to do so after discovering Spicy World.
Finally, I challenge you to find semolina for less than $1.50 a pound!
I had my own recipe for making pasta that I picked up from the interweb somewhere. I only used one cup of the flour (with one cup of All-purpose flour) and the total recipe made one pound of pasta (yes, I weighed it).
Anyway, the flour itself was sifted with the AP flour to make the pasta. After the eggs, salt and oil, it was kneaded for 10 minutes. Then the flour was passed through a pasta machine to flatten it and then it was made into linguini. The pasta itself came out fine.
Since this was my first foray into homemade pasta, I think it was a success. The product was as expected. If I had something to compare it to, I might have had a different opinion. But I don't, so I don't.
I would buy it again and recommend it to others.
I just like to echo what other reviewers already mentioned. This order is a lot of semolina flour. I order on Amazon because I tried looking all over locally and couldn't find it. Split it with your family, friend, and strangers. I'm sure they'll all appreciate it once they taste the difference it makes.
