Eppicotispai Chitarra (pronounced key-tahr-rah) is a pasta maker believed to have been invented in Chieti, Abruzzo region in central Italy around the 1800's.Meaning 'guitar,' a chitarra looks like a double-sided harp, with strings set close on one side, farther on the other. In then center of the device is a slanted board, designed to allow the cut pasta to slide off easily once it's been cut by the strings. Simply use a rolling pin, flattening and pressing the dough through the wires.

3 times and like the Pasta. I did have some trouble
getting it to cut threw the Pasta Dough, I had to push it
several times to get it to pass threw the wire strings. Are
they all like that? Also my Pasta Dough was rolled very thin..
I made some straight up plain pasta dough and ran it through my roller at the thinnest setting; let it sit for a bit; then tried various rolling pins to see which would work best. This was for the angel hair side--haven't tried the spaghetti side.
I discovered that the best method seems to be to be sure to lightly flour the section before beginning to roll; then after giving it a few passes, press down and slide down the length of the wires without allowing the roller to turn--just pushing it.
Also make sure that the wires are good and tight. Presto! Some quite lovely product.
UPDATE: I've now made both sizes of pasta with equal success. The larger size was actually easier and the noodles are great! fyi, my dough recipe is very simple: 1 egg per person dropped in the middle of a pile of ATTA flour (available at Costco), some salt on top of the egg; whisk with a fork a bit, flipping the flour onto the egg. Work the whole mess with hands. Moisten if needed. Be sure and knead for a good ten minutes. Presto. One egg will make plenty for a small dinner for two.
Looks good.
I bought it for gift, so I can't test it yet :)
