The Dalstrong Origin Story
Dalstrong was established in 2014 by our CEO David Dallaire, who is the mastermind behind the brand and designs. Based in Toronto, Canada, Dave takes his inspiration for our knives from pretty much anywhere you can imagine — landscapes, infrastructure, history, movies, art, and more. Every proprietary design seeks to push the boundaries of innovation, leveraging the collaboration of our global team to get a just-right knife into your hands.
In 2015, Dalstrong Inc was incorporated in Canada, followed by the United States in 2019. Since then, Dalstrong has aggressively expanded our culinary business around the globe. In 2017 we entered the European markets, and currently have warehouses located in the US, Canada, and the UK, with plans to open new warehouses in the Netherlands.

Every line of knives that we manufacture sources premium steel from Japan, America, Germany, Sweden & China.
These premium imported materials are painstakingly assembled by expert bladesmiths in a state-of-the-art facility within YangJiang, China — a city with a renowned knife crafting tradition dating back over 1400 years.
These highly trained craftsmen spend anywhere from 30-60 days on each knife, painstakingly hand-polishing and hand-finishing the blades and handles using the 3-step Honbazuke honing method.
This traditional Japanese process is married with high-tech processes such as Cryo-tempering which improves the steel’s crystalline structure (making them stronger). This merging of modern technology allows us to achieve exceptional quality while keeping the costs of our knives lower for our customers.
Where are Dalstrong Knives Made?
Every single one of our knives is painstakingly assembled by expert bladesmiths in a state-of-the-art facility within YangJiang, China — a city with a renowned knife crafting tradition dating back over 1400 years. Today, Yangjian holds the title of National Capital of Knives and Scissors, exporting to more than 100 countries and accounting for 60% of all knife product exports in China.
Before we partner with any global organization, we seriously consider their stance on worker’s rights and eco-sustainability. It’s important to us that our partners align with our values. Our main manufacturing partners are certified ISO humans rights compliant, with 4 weeks of paid vacation for their employees per year and fair wages.
At our manufacturing plants, the artisans and lead foremen are on a personal mission to prove to the world that Chinese knife quality is world-class. As such, our factory proudly stands head and shoulders above all others in YangJiang.
Our Global Reach
We want the whole world to experience Dalstrong. Our innovative designs draw on inspiration from all over the planet, including art, architecture, historic societies, cultural traditions, and more. Fueled by the motivation of our international team, we won’t rest until we have Dalstrong knives in every corner of the globe. So far, we’ve shipped our knives to 50 different countries on every continent but Antartica. Supporting Our Community
In addition to working directly with chefs, Dalstrong has partnered with various institutions to positively impact our communities and the culinary world at large.
By the end of 2021, we’ll have donated 1200 professional chef knives to the Careers through Culinary Arts Program (C-CAP). A workforce development nonprofit, C-CAP provides culinary, job, and life skills to middle and high school kids across the United States. A thirty-one-year-old organization striving to help further food and social justice, equity, and inclusion, they’ve served 350,000 students and distributed 62 million in scholarships to date.
Dalstrong is also proud to have joined both the Wounded Warrior Project and Wounded Warriors Canada. Both projects support veterans or first responders and their families, offering various support programs for community-building, mental wellness, physical wellness, career counseling, and independence.

Customer support for Dalstrong is excellent!;) After returning the 5" Santoku I was offered to try out their 7" Phantom Series Santoku in AUS 8 steel in the same price range. Fit and finish of the knife is great, feels comfy in hand. Geometry is spot on and surprisingly for softer AUS 8 steel, edge stays really sharp with no issues. Great heat treatment and it is really easy to re-sharpen! Definitely will check Dalstrong again if I will need another knife in my kitchen. Thank you for letting me try another knife;)
5" Santoku review;
I was looking forward to using this little cute blade in my kitchen, but my expectations fell short after unpacking.
My short description would be "cute, with nice looks...but heavy and useless..."
Just to let you know I do own about 20 different blades in different types of steel and finishes and I also sharpen all of them on water stones or sharpening diamond plates and various grits of strops to get them crazy sharp. 2 stars and me returning this would be because...
Reasons;
1. Surprisingly very heavy for the size of the blade. Could do better with thinning 5 inch blade and using different handle material.
2. Dented handle...which I would not even mind if not for no3
3. Completely incorrectly grinded and finished blade.
Let me describe what I mean...
1. There was a big difference in how far was the Damascus finish reaching on each side...should not it be even on both sides???
2. Santoku as described on Dalstrong and wiki is nearly straight blade from second third of the blade all the way to the handle and should be parallel with the handle or pointing away from IT. It even shows it in the description of the item on amazon.(see picture) This item is not described as rocking santoku ....even then, that is completely different design than this knife.
-this was not the case with my Santoku, nor it was with the previous reviewers. Their pictures show the same issue.
Edge of the blade by the handle was grinded WAY TOO FAR which completely rounded it off and made it pointing towards the handle.
This would not be a problem on a taller knife but on this one... even if you try to hold it in a pinch grip keeping your fingers out of the way and try to cut with last 1-2 inches of only 5 inch blade, you would not be able to do it without hitting the table with the handle of the knife...

1. Surprisingly very heavy for the size of the blade. Could do better with thinning 5 inch blade and using different handle material.
2. Dented handle...which I would not even mind if not for no3
3. Completely incorrectly grinded and finished blade.
Let me describe what I mean...
1. There was a big difference in how far was the Damascus finish reaching on each side...should not it be even on both sides???
2. Santoku as described on Dalstrong and wiki is nearly straight blade from second third of the blade all the way to the handle and should be parallel with the handle or pointing away from IT. It even shows it in the description of the item on amazon.(see picture) This item is not described as rocking santoku ....even then, that is completely different design than this knife.
-this was not the case with my Santoku, nor it was with the previous reviewers. Their pictures show the same issue.
Edge of the blade by the handle was grinded WAY TOO FAR which completely rounded it off and made it pointing towards the handle.
This would not be a problem on a taller knife but on this one... even if you try to hold it in a pinch grip keeping your fingers out of the way and try to cut with last 1-2 inches of only 5 inch blade, you would not be able to do it without hitting the table with the handle of the knife...
UPDATE: Customer service is second to none. They solved my problem quickly and now the knives that I bought are super sharp. It was a sharpening issue at the factory level that is rare and now my knife is great. Their customer service is really really incredible. Small family company really shines through. Canadian company is super impressive. I highly recommend their knives with confidence because I know they will rectify the problem if any and they stand by their products. I will be buying more of their knives in the future for sure. They have made me a loyal customer.
Some reviews mention that the blade has a factory edge that is a bit dull. This is true and probably only noticeable to the trained hand. I gave it a little love on a 4000/8000 grit water stone and it was razor sharp. Nearly as sharp as my most expensive, handcrafted knife. A nakiri that can slice translucent coins of carrot with zero pressure.
Overall, my favorite features are the bolster, the rectangular shape of the granton edge (as opposed to the more oval scallops), and the ergonomic material and orientation of the handle. The aesthetic details are great, but of little use in practical application. Still, I really like the way this knife looks. I read reviews suggesting the damascus layering was murky or lower grade. They are wrong. It looks exactly as it should.
Could it be sharper fresh out of the box? Sure, but any kitchen rat worth his weight in salt knows that you put a proper edge on a knife before you employ it in a commercial setting.
I like your product, guys. I am happy. The price is insane for the quality. Keep fighting the good fight. I have little doubt that if you maintain the same standards, your knives will be ubiquitous in kitchens around the globe. Thanks.

Dalstrong Shoguns are not cheap but the build quality is top end and the finish is also high quality. I know they are constructed in China but the materials seem to be genuine and have lasted in my kitchen for over a year now with no issues apart for the user getting the odd cut through being stupid and forgetting these are like razors when hone properly.
